This technical challenge was presented to the baker in series 2 episode 8. Ice buns are found in most British bakeries. To make 12 iced buns all the same shape and all look the same is not an easy task especially when it comes to dipping the buns in icing.

GBBO Technical Challenge S2E3 - Focaccia
Focaccia was the third technical challenge of the second series of The Great British Bake Off. This a great challenge to test the bakerβs bread skills as focaccia contains a lot of water, which is different, compared to most bread recipes. It is important to use all of the water in the recipe no matter how sticky the dough gets, as this is what gives the focaccia its signature irregular crumb structure (see the picture at the bottom of the page).

Just like the Victoria Sponge technical challenge from Series 1 Episode 1 of The Great British Bake Off, there is no where to hide with this bake making it a great challenge to ranked all of the bakers.
