White Chocolate and Raspberry Mousse Cake

This cake uses two flavour pairs that work perfectly together - white chocolate and raspberry. The white chocolate mousse provides a subtle flavour without over powering the sharp taste of the raspberry glaze. This cake also uses a genoise sponge, which is lighter type of cake which then soaked in a raspberry syrup.

Orange and Cardamom Iced Buns

This ice bun recipe uses enriched bread dough, which means the dough contains butter, sugar and eggs. This is my twist on Paul Hollywood's iced bun recipe; I have added the zest of an orange and 1 teaspoon of ground cardamom into the dough. Also I have added an orange curd filling for the inside of the iced bun.
