I had some leftover Lotus Biscoff Spread from when I made my Baked Lotus Biscoff Cheesecake, so I decided to use it to make these cupcakes. I used the Lotus Biscoff Spread in the cupcake batter and in the buttercream so that the sweet caramelised Biscoff taste stands out! This recipe makes around 18 cupcakes!

For the first technical challenge of series 6 of The Great British Bake Off, the bakers were asked to make Marry Berryβs Frosted Walnut Layer Cake. This was a nice technical challenge to do, make the Walnut Cake was easy, the tricky part is making the boiled icing frosting, I have never had a frosting like this it sets quickly so you have to work quickly to decorate this cake.

Bombolonis are Italian doughnuts that are shaped into round balls. These Bombolonis are coated in cinnamon sugar and are filled with a Nutella Ganache. These homemade doughnuts taste so much better than shop brought ones! I recently got a deep fat fryer and I wanted to test it out. I used to fry doughnuts in a saucepan, but it is so hard to keep the temperature of the oil at the right temperature. The deep fat fryer stops this problem so no more burnt doughnuts, I highly recommend getting one, it makes things so much easier!
