Nutella Stuffed Spiced Muffins

Nutella Stuffed Spiced Muffins

With Autumn setting in these Spiced Muffins filled with Nutella are a perfect for a cold night. The muffin mixture contains cinnamon and nutmeg which gives the muffins a slight warmth to them. To make these Nutella Stuffed Spiced Muffins even better put the in the microwave for a few seconds to get a gooey Nutella center!

Spiced Muffin Mixture:

 300g Self-Raising Flour

150g Caster Sugar

1 Tsp Baking Powder

1 Tsp Ground Cinnamon

1/2 Tsp Ground Nutmeg

200ml Milk

100ml Sunflower Oil

2 x Eggs

2 Tsp Vanilla Extract

Spiced Sugar:

50g Granulated Sugar

1 1/2 Tsp Ground Cinnamon

1/2 Tsp Ground Nutmeg

Filling:

200g Nutella

Decoration:

Nutella Ganche:

75g Nutella

75ml Double Cream

Decoration:

50g Hazelnuts

 1. Preheat the oven to 190C/375F/Gas Mark 5. In a large jug add the milk, eggs, sunflower oil and vanilla extract and mix.

2. In a large mixing bowl add the self-raising flour, ground cinnamon, ground nutmeg, caster sugar and baking powder.

3. Next to make the spiced sugar, place the ground cinnamon, ground nutmeg and granulated sugar into a bowl and mix.

4. While mixing slowly pour the liquid ingredients into the dry ingredients and mix until all of the ingredients have been fully incorporated.

5. Line a cupcake tin with 12 x Tulip Muffin Cases. Using a large ice cream scoop divide the Spiced Muffin mixture into the 12 cases. The cases should filled to around 2/3 full.

Bake the Spiced Muffins for 20-25 minutes.

6. Sprinkle over the spiced sugar over the Spiced Muffins batter.

7. Bake the Spiced Muffins for 20-25 minutes. Once the Bakewell Muffins are golden brown remove them from the oven and leave the Bakewell Muffins to cool on a wire rack for 1 hour.

8. While the Spiced Muffins cool, toast the hazelnuts in the oven at 180C/350F/Gas Mark 4 for 10-15 mins. Then remove the hazelnuts from the oven and leave to cool for 20 minutes before chopping the hazelnuts into small pieces.

9. Next using a Cupcake Corer, remove the centers of the Spiced Muffins. Fill a piping bag with Nutella pipe the Nutella into the Spiced Muffins. Then place the remains of the Spiced Muffins on top of the Nutella.

11. With the remaining Nutella (in the piping bag), drizzle the Nutella over the Spiced Muffins.

12. Finally, sprinkle the toasted hazelnuts over the top of the Spiced Muffins.
